Ingredients:
400g Cod Loin (boned) (2 portions)
100g Winter Tarn unsalted butter
25ml white wine
3 garlic cloves (crushed)
3 tsp freshly squeezed lemon juice
2 tsp freshly chopped dill
Salt and black pepper to taste.
Bunch of fresh asparagus
200g French beans
Method:
Lemon Butter:
Add the butter, garlic and lemon juice, dill and the white wine to a frying pan and bring to a gentle simmer on a low-medium heat for 3-4 minutes until the wine has reduced and the butter has melted, and the sauce is fragrant.
Set aside.
Bake the Cod:
Line a baking tray with baking paper. Place the Cod loin fillets, the asparagus and French beans onto the lined baking tray. Pour the sauce mixture evenly over the Cod and the vegetables and season with salt and pepper.
Then bake in a pre-heated oven at 180°C until the fish and the vegetables are cooked through, for approximately 12-14 minutes.
Serve immediately and garnish with a sprog of dill.
